Recently I have been reflecting a lot about The Pakistan Forum, mostly about its larger mission for Pakistan and Pakistani culture. I realized that until now we have done a great job of providing good writings about politics and contemporary issues related to Pakistan, but have not really covered the everyday aspects of Pakistani life: food, music and other such things.

I would like to take this opportunity to send my invitation out to the blogosphere: we would be delighted to publish your food ideas, your recipes, culinary innovations, and all other things about tastes, smells, sounds and colors of Pakistan in all its varieties. Not a great cook myself, I would like to initiate this effort by introducing you to a Pakistani cooking blog that I recently encountered and highly recommend.

Run by Rafia Shujaat, Desi Flavors is a wonderful blog that provides quite a few traditional, some fusion, and some very innovative recipes. I could not recommend this wonderful resource enough. I provide a brief excerpt from one of her recipes, but do hope that you would visit her blog often to sample the wide array of recipes and ideas provided on her blog.

Double Chapli Kebab Burger

My family loves chapli kebab. Last weekend we had to go out, so instead of planning to eat something from any restaurant; I decided to make something myself and keep it in the car. I always have chapli kebab masala ready in the freezer. So I defrosted it overnight in the refrigerator. In the noon, next day I shallow fried the chapli kebabs and double layered the buns with tomato slices, chutney and mayonnaise. Nothing could be as tasty as these homemade desi chapli kebab burgers.

Chapli kebab originally come from Afghanistan but we have a Peshawar version in Pakistan as well. They are different in combining the ingredients. They are a whole meal if made the right size. And are perfect with Naan bread or any form of bread.

The ingredients used in making Afghani Chapli Kebab are:

ground beef

egg scrambled

egg whisked

teaspoon salt

teaspoon cruched coriander seeds

teaspoons crushed cumin seeds

teaspoon red chili powder

teaspoon turmeric powder

garam amsala

wheat flour

oil/ghee

tomatoes

onions

fresh coriander

green chilies
